In short, the history of Senatore Cappelli durum wheat begins in the early twentieth century when the geneticist Nazareno Strampelli, starting from North African grains, selected a very resistant rustic variety suitable for southern soils, a plant up to 1,80m high, which he decided to give the name of Senator Cappelli, who had begun the modernization of agriculture in Puglia.


The forgotten cobs of Cappelli wheat, obtained from a careful natural selection in Foggia, have been the most widespread crops in Southern Italy and the Islands for decades. Cappelli wheat is considered the father of durum wheat, defined in the 1930s as the "chosen race", a rustic durum wheat that prefers poor and clayey soils.


It has excellent nutritional qualities and a high protein value; in Puglia these characteristics have awarded it the nickname "meat of the poor".
